Panda Express Super Greens (CopyCat) Recipe
These Super Greens are such an easy way to eat more vegetables, especially if you struggle to eat enough. They are one of the only things I get from Panda Express, but at over $4 for a small side, it is definitely much cheaper to make at home.
To make these Super Greens, you’ll need:
- Broccoli – Adds a delightful crunch and a mild, slightly earthy flavor to the dish, providing essential nutrients and texture.
- Cabbage – Offers a crisp and refreshing element, complementing both the flavor and texture of the greens, adding a delightful crunch and a mild sweetness.
- Kale – The star of the show, kale brings its robust, earthy flavor to the dish. It’s packed with nutrients and creates a harmonious balance with other ingredients.
- Butter – Provides a rich and creamy base for the stir-fry, enhancing the overall mouthfeel and contributing to the dish’s savory goodness.
- Red Pepper Flakes – Introduces a subtle heat that elevates the dish, adding a hint of spice that complements the natural sweetness of the greens and creates a balanced flavor profile.
- Garlic – Infuses the dish with aromatic depth and savory notes, enhancing the overall flavor and providing a delightful fragrance.
- Ginger – Adds a layer of complexity with its unique, slightly spicy, and sweet flavor, offering a warm and comforting element to the stir-fry.
- Soy Sauce – Provides a rich umami flavor, creating a savory base and adding depth to the dish. You can also use, coconut aminos instead for a soy-free option.
- Chicken Broth – Enhances the umami flavors, providing a savory and comforting backdrop to the greens and seasonings.
- Sesame Oil (optional) – If used, imparts a subtle nutty aroma and flavor that enhances the overall Asian-inspired profile of the dish, providing an extra layer of depth and richness to the flavors.
Start by melting butter over medium-high heat. Toast red pepper flakes for about 1 minute, then add minced garlic and grated ginger; sauté until fragrant. Introduce soy sauce and sesame oil to the mix.
Incorporate chopped kale, broccoli, and shredded cabbage, ensuring an even coating in the soy-infused butter. Stir-fry for 3-5 minutes until the greens maintain vibrancy with a slight crispness. Add chicken broth, cover, and stir-fry for 2-3 minutes, ensuring a delightful coating. Remove from heat and savor the vibrant Super Greens dish.
Panda Express Super Greens (copycat) Recipe
Ingredients
- 1 head of broccoli chopped
- ½ small head of Cabbage chopped
- 3-4 cups chopped Kale massaged
- 4 tbsp of butter
- ½ tsp Red pepper flakes as much as you prefer
- 1 head Garlic as much as you desire. I used 6 cloves minced
- 1/8 tsp ginger minced
- 2 tbsp of soy sauce (( I used coconut amoinos
- 2 tbsp Chicken broth I used bouillon paste + water, or you can use plain water
- 1 tsp sesame oil optional
Instructions
- Heat butter over medium heat. Add red pepper flakes and toast for about 1 minute.
- Add minced garlic and grated ginger to the pan and sauté for about another minute until fragrant. Add soy sauce and sesame oil.
- Next, add chopped kale, broccoli, and shredded cabbage to the pan. Mix well to ensure the vegetables are evenly coated in butter/soy mix. Stir-fry for 3-5 minutes or until the greens are wilted but still vibrant and slightly crisp. (i.e. the broccoli and cabbage should still have a “bite” to them)
- Pour chicken broth over vegetables. Mix well, then cover. Continue to stir-fry for an additional 2-3 minutes, ensuring the vegetables are evenly coated with the sauce. Remove from heat and enjoy!
- I love that the broccoli will still have some body to it. We ate this with salmon and white rice, but when I say it goes with almost anything, it goes with almost anything!
