Smothered Okra with Shrimp and Sausage

Certain meals I cook immediately remind me of home back in Louisiana, and this Okra, Shrimp, and Sausage dish is definitely one of them! If you are a fan of okra, this is definitely a meal you’ll want to keep in rotation. It is a symphony of cajun/creole flavors that will have asking for seconds before you even finish the first bite.

Everything you need:

  • Shrimp: Succulent and flavorful, these add a delightful umami to our dish.
  • Andouille Sausage: This savory, smoky sausage comes with a kick, and infuses a rich, Cajun-inspired essence, elevating the overall flavor.
  • Chicken Broth: The liquid gold that will infuse our tomato sauce with flavor.
  • Garlic: Because everything’s better with garlic.
  • Onion: SautĂ©ed to perfection, the onion adds a subtle sweetness, complementing the medley of flavors.
  • Tomato Sauce: The vibrant, tomato-based sauce brings a luscious consistency and a burst of tangy goodness.
  • Tomato Paste: Toasted for depth, this concentrated paste contributes a rich, savory undertone to the stew.

Instructions:

An important part of this dish is to desliming your okra, and you can easily do this by sautĂ©ing your okra in oil with a splash of vinegar. Let it cook, and eventually you’ll see the slime cook out.

Everything else is pretty standard: remove the de-slimed okra, and sautĂ© your onion. Then add in your sausage and cook until it’s browned. Move aside, add garlic, and cook until fragrant, then add in the tomato paste. Toast the tomato paste first, then add 8oz. of tomato sauce and 1 16oz can of diced tomatoes. Return your okra back to the pot and season to taste (garlic powder, onion powder, Cajun seasoning, black pepper, Italian seasoning, pinch of salt) and 2 cups of chicken broth.

Bring to a boil and then reduce heat to medium. This is a great time to devein and season your shrimp with the above seasonings. Place in fridge to marinate.

After 30 minutes the okra should be soft. Then, you can add in your shrimp. After about 5 minutes, the shrimp should be done. Serve over rice, and enjoy!

Recipe Tips

Non-Slimy Okra: To get rid of the slimy okra texture that many do not enjoy, just sauté your okra in oil with a splash of white vinegar over medium high heat. Continue to stir and you will see the slimy-ness cook out, leaving you with de-slimed okra.

Tender Shrimp: Keep an eye on the shrimp as they simmer in the stew. Aim for tender but not mushy. Once they turn pink, they are done. Do not overcook.

Garnishing: Elevate your presentation by garnishing with a fresh parsley, and serving with hot sauce for extra kick!

Ingredients

  • 1 16oz Okra deslimed
  • 1 lb Shrimp deveined
  • 12 oz Andouille Sausage sliced
  • 2 tbsp Oil
  • 1 tbsp Vinegar
  • 2 cups Chicken broth
  • 1 Onion diced
  • 4 cloves Garlic minced
  • 2 tbsp Tomato paste
  • 16 oz Diced tomatoes
  • 8 oz Tomato sauce
  • 2 tbsp Garlic powder
  • 1 tbsp Italian seasoning
  • 1/2 tbsp Cajun seasoning
  • 1/2 tsp Black pepper
  • Salt and Pepper to taste

Instructions

  • Remove the okra, and saute your onion.
  • Next, add in your sausage and cook until it's browned. Remove from pot.
  • Move aside, and add garlic, cook until fragrant, and add in the tomato paste.
  • Toast the tomato paste first, then add 8oz. of tomato sauce, 1 16oz can of diced tomatoes,
  • Return the sausage and okra back to the pot. Season to taste with garlic powder, onion powder, Cajun seasoning, black pepper, Italian seasoning, a pinch of salt).
  • Add chicken broth. Bring to a boil and then reduce heat to medium. When you reduce the heat, devein the shrimp, season with the above seasoning blend, and place in fridge to marinate.
  • After 30 minutes the okra should be tender. Add in your shrimp. When the shrimp is done, remove from heat. Serve over rice and enjoy!
