Chipotle Cilantro Lime Rice (Copycat)

If you ever went to Chipotle only to realize the rice was undercooked or too gummy for your preference, this is the recipe for you. It’s so easy to make and comes together with only 5 minutes of prep.

Seriously, the last time I ordered, my rice was so undercooked I never went back and started making it myself. My daughter can be very selective with her flavors, and she was a huge fan of Chipotle’s rice, and she clears her bowl every time.

How to make Chipotle Cilantro Lime Rice

All you need are a few ingredients: long grain rice (my favorite is basmati, but jasmine rice works well, too), water, chicken bouillon, 2 minced garlic cloves, 2 bay leaves, juice of 1-2 limes, and cilantro.

Rinse your rice and bring the water to a boil. Add in chicken bouillon and salt to flavor. Add your rice. I use the 1:2 ratio: For every cup of rice, two cups of liquid. Add minced garlic and bay leaves, and cover. Cook until done.

Once rice is done, fluff and add chopped cilantro and lime juice. I add a little at a time and salt, so I can adjust the flavor to my liking. You can add as much cilantro and lime juice as you like. You really can’t mess this up!

Now you have a batch of cilantro lime rice that you can enjoy in so many dishes!

Ingredients

  • 1 cup long grain rice basmati or jasmine preferred
  • 2 cup water
  • cilantro to taste
  • 1 tsp chicken bouillion
  • 2 bay leaves
  • 2 garlic cloves minced
  • 1-2 limes juiced

Instructions

  • Rinse your rice and bring water to boil.
  • Add in chicken bouillon and salt to flavor.
  • Once boiling, add your rinsed rice. I use the 1:2 ratio: For every cup of rice, two cups of liquid.
  • Add minced garlic, bay leaves, and cover. Cook until done. (17-20 minutes).
  • Once the rice is done, fluff and add chopped cilantro and lime juice.

Notes

I add a little cilantro and lime at a time, as well as more salt, so that I can adjust the flavor to my liking. You can add as much cilantro and lime juice as you like.
