Easy Cilantro Lime Rice. Just like Chipotle, but probably better! Made with fresh lime, cilantro, and basmati rice. Serve with your favorite Asian or Mexican meals, or enjoy it all on its own.
Once boiling, add your rinsed rice. I use the 1:2 ratio: For every cup of rice, two cups of liquid.
Add minced garlic, bay leaves, and cover. Cook until done. (17-20 minutes).
Once the rice is done, fluff and add chopped cilantro and lime juice.
Notes
I add a little cilantro and lime at a time, as well as more salt, so that I can adjust the flavor to my liking. You can add as much cilantro and lime juice as you like.
