Everything you need:
- boneless, skinless chicken breasts
- pineapple chunks
- bell pepper
- sweet chili sauce (I use and love this brand. The Trader Joe’s version is great, too!)
- garlic
- cornstarch and flour
- neutral vegetable oil for frying
How to make Sweet Fire Chicken Breast:
1. Coat and Fry Chicken:
In a bowl, mix chicken and egg. Then coat the chicken with flour and cornstarch mix.
Fry the coated chicken until golden brown and cooked through. Set aside.
2. Prepare Vegetables:
Chop the onion, bell pepper, and pineapples.
Sauté diced bell pepper, onions, and pineapple and cook until slightly tender.
Add minced garlic and sauté until fragrant. Add a tbsp or two of water if needed.
3. Create Sweet Fire Sauce:
I don’t bother to make this from scratch. I think the store-bought version is easy, affordable, and very good and it’s not worth the hassle for this meal from scratch.
Add the Sweet Chili sauce to the chicken/bell pepper mixture and mix well. Bring it to a simmer, stirring until everything is coated and heated through.
Recipe Tips
Save Time: Use chicken nuggets to save time on prep for busy weeknights. Air Fry the chicken for a healthier alternative to deep-fried chicken
Adjust Heat/ Sweetness: Add more heat by adding red pepper and/or sriracha sauce. Need more sweetness, add honey!
Garnishing: Elevate your presentation by garnishing with chopped green onions and/or sesame seeds.
