Sheet Pan Fajita Salmon with Chipotle Lime Butter
This delicious sheet pan fajitas salmon combines the smoky heat of chipotle with the zest of fresh chipotle lime butter. Juicy salmon fillets are roasted with vibrant bell peppers and onions, seasoned with a flavorful fajita spice blend. The dish is finished with a squeeze of lime and a sprinkle of fresh cilantro, creating a perfect balance of spicy, tangy, and fresh flavors. Ingredients
For the Salmon:
- 2 lbs Salmon
- 1 tbsp avocado oil
- 3 tbsp fajita seasoning
- Salt and pepper to taste
- Fresh lime wedges for serving
For the Vegetables:
- 1/4 cup avocado oil
- 2 tbsp fajita seasoning
- 3 bell peppers any color, sliced
- 1 large red onion sliced
- 1 small broccoli head cut into florets
- 1 cup mushrooms sliced
- 2 tbsp lime juice approx. juice of ½ lime
- Salt and pepper to taste
For the Chipotle Lime Butter
- 1/2 cup 1 stick unsalted butter, softened
- 2 tbsp lime juice approx. juice of ½ lime
- 1 tsp lime zest
- 1 chipotle peppers in adobo finely chopped
- 2 tbsp fresh cilantro chopped
- 1/2 tsp salt
Instructions
- Cilantro Lime Chipotle Butter: Preheat your oven to 425°F. In a medium bowl, combine the softened butter, lime juice, lime zest, chopped chipotle peppers, chopped cilantro, and salt. Mix thoroughly until all ingredients are well incorporated.
- Fajita Vegetables: In a small bowl, whisk avocado oil, fajita seasoning, salt and lime juice together until incorporated. On a large sheet pan, spread out the sliced bell peppers and onions. Drizzle with seasoning/oil mix and toss to coat evenly.
- Norwegian Salmon: Place the salmon on the sheet pan with the vegetables. Drizzle the salmon with avocado oil and sprinkle with fajita seasoning, salt and pepper to taste. Rub the chipotle lime butter generously over the top of the salmon using a fork.
- Place the sheet pan in the preheated oven and bake for 12 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
- Remove the sheet pan from the oven and let it sit for a minute. Squeeze fresh lime juice over the salmon and vegetables. Garnish with chopped cilantro. Serve with additional lime wedges and cilantro lime rice, if desired.
